Ingredients:
- 1.5 cups almond flour
- 1 cup unsweetened shredded coconut
- 3/4 cup sweetener (I recommend Pyure Organic Stevia Blend)
- 2 tbsp raw cacao (I used Navitas Natural Mayan Organic Raw Cocoa Powder) (Note: If your child has a cocoa sensitivity, you can substitute peanut butter or peanut powder instead!)
- 1 cup unsweetened coconut milk
- 2 tbsp coconut oil
- 1 tsp vanilla extract
- 1/2 or 1 tsp rum aroma (optional)
- Plus, 1 cup unsweetened shredded coconut for rolling the balls
Preparation:
- In a bowl, thoroughly mix all the ingredients until well combined. You should achieve a very soft dough texture that can still be molded. If the dough is too firm, add more coconut milk until desired softness is reached. If it’s too soft, incorporate additional shredded coconut to firm it up.
- With wet hands, shape the dough into balls approximately 1-1.5 inches in diameter.
- Roll each ball in the shredded coconut, ensuring the surface is fully covered.
- Place the balls in a dish and let them chill in the refrigerator for 30 minutes. This will help them firm up.
Yields approximately 20 servings.
Tips:
- Don’t worry if the dough feels too soft initially. It will firm up nicely while chilling in the fridge.
- For an extra burst of flavor, you can place a pitted canned cherry in the center of each ball.
