These Zucchini Waffles are so easy to make and they are perfect as a side dish or for a low carb breakfast or snack.
You only need your blender , your waffle maker and 10 minutes for the on-hand preparation!
I love to cook with zucchini because you can easily “hide” it in any dish..so even your picky eater will eat it..and love it!
Zucchini is very versatile as it is perfect with a wide range of seasonings and can be made in many shapes as you can cut..grate..stripe..mush..and you can bake..boil..fry..or eat it raw…!
So this recipe again is very easy and quick to make.
It is perfect for any tired night when you still want to make a special dinner to your family!

Ingredients:
2 cups zucchini ( mushed in your blender)
1/2 cup vidalia onion ( mushed in your blender )
2 egg
1 cup of Almond flour
1/2 cup of Coconut flour
1/2 cup parmesan cheese
1/2 cup mozzarella cheese
pinch pink salt
optionally you can season it with grated black pepper/nutmeg/garlic powder.
Method:
- Peel the zucchini and onion cut them into pieces.
- Put the zucchini and onion pieces to the blenderadd eggs and blend them until smooth.
- Add the flours, parmesan, mozzarella and salt + seasoning and mix them with a spoon until well incorporated.
- Spray some olive oil to your waffle maker and bake the dough for about 10 minutes in or until it turns golden brown.
- Serve them with plain yoghurt sour cream and salad.
