Before switching to ketogenic kitchen Stony sometimes used to eat my gluten free porridge dish with fruits and nuts..he LOVED it. At the beginning of 2016 we have switched to ketogenic diet so porridge was not an option anymore. I had to eliminate it from his diet and I was eagerly looking for some basic meal what would substitute porridge in his diet. When I have found this banana bread I knew already this is the one!
After preparing the banana bread I cut it up and mix it with the same fruits and nuts and I put some sweetened sour cream on the top to make it moist as coconut flour tends to be a bit dry.
The best of this recipe that it perfectly fits on those busy mornings or on those tired afternoons when you need to prepare something healthy, quick but importantly something what your child is happy with!
The whole stuff is ready in 10 minutes! The on-hand time is 5 minutes the baking time is 3,5 minutes (in microwave) and the decoration/final touch is 1,5 minutes. Done in 10 minutes. Delicious, rich and healthy!!!
So what you need for the dough:
- half a banana
- 1 egg
- 2 tbsp coconut flour
- 1/4 tsp of cinnamon
- 1/4 tsp baking powder
- 2 tbsp coconut or almond milkAfter baking you need:
- half cup of sour cream mixed with 1/4 cup of water and half tsp sweetener ( I use erythritol)
- any kind of nuts ( cashew, pumpkin seed, sunflower seed… )
- any kind of fruits ( apple, blueberries, strawberries, grapes or mango…)
Preparation:
Mix all the ingredients of the dough in a small microwave safe cup.
Put it to the microwave for 3 to 3,5 minutes.
Done.
Final touches, decoration:
Cut the coconut dough into smaller cubes and put them into a bigger serving bowl. Add the nuts and chopped fruits.
Mix them well and when is ready put the sour cream mix on the top.
TIP:
You can also drip some coconut oil and/or some sugar free maple syrup or some sugar free chocolate syrup on the top.
You can also add some sugar free shredded coconut to make it more coconuty 🙂
You can also add the fruits into the dough before putting it to the microwave. It would make the dough more moist and colorful 🙂

Get the things out you need:
I use the RUMFORD Aluminum free! baking powder.
Mix ingredients and when is well blended put it to the microwave for 3-3,5 minutes.
After microwave it will look something like this 🙂 a nice little cylinder.
If you add some fruits into the dough it will look something like this 🙂 ( I love this version! )
not the only thing you need to do is cutting the dough up into cubes and mixing it up with your fruits and nuts..and put the mixed cream on the top.
or you can also prepare like this dripped with some sugar free maple syrup on the top ( my favorite version 🙂
