Low carb pumpkin muffin with cream cheese filling

It is creamy…it is rich…it is delicious..a perfect breakfast with a cup of hot chocolate or cafe made of coconut milk!
When Stony my son tried it he closed his eyes and told me with devotion: “Mum it is “fantastico” 🙂 …” I was just laughing on him but I knew I have found another big favorite muffin recipe..!

So here we go..it is easy to prepare, with the creamy filling it feels and tastes special and very decorative even for party time and can be a perfect pumpkin dessert for the upcoming Halloween parties.

Savory stuffed mushrooms

This is a very simple, quick but at the same time a very decorative dish what can stand for itself as a single dish or as a side dish.
We used to eat it for dinner, when I want to prepare something a bit special and warm for dinner.
Stony loves mushrooms so we do and the best about this recipe again is that it takes about 10-15 minutes on-hand preparation only. The baking time around 15-20 minutes.
It is quick and easy to make, it is low carb and it is properly light for a dinner..

Chicken stuffed eggplant

Oh my all time favorite stuffed eggplant!!! I have made this recipe hundred times already and none of us can get bored of it..the taste is so delicious and versatile and can be combined very well with all kind of meats, veggies, spices.
You can make just the light version for your kiddos with chicken, some basil leaves and cheese..but you can also add garlic, parmesan, olive oil and it turns to be a heaven!

Eggplant is a very good source of dietary fiber, vitamin B1, and copper. It is a good source of manganese, vitamin B6, niacin, potassium, folate, and vitamin K.

This stuffed eggplant recipe is easy..quick..and the result is amazing!
