Chicken stuffed eggplant

Oh my all time favorite stuffed eggplant!!! I have made this recipe hundred times already and none of us can get bored of it..the taste is so delicious and versatile and can be combined very well with all kind of meats, veggies, spices.
You can make just the light version for your kiddos with chicken, some basil leaves and cheese..but you can also add garlic, parmesan, olive oil and it turns to be a heaven!

Eggplant is a very good source of dietary fiber, vitamin B1, and copper. It is a good source of manganese, vitamin B6, niacin, potassium, folate, and vitamin K.

This stuffed eggplant recipe is easy..quick..and the result is amazing!

Zucchini Chocolate Muffin

Yesss, a muffin made of Zucchini! I just love it! It is extremely moist, delicious, smooth. They are low carb and have no sugar.
I have tried so many low carb chocolate muffins but they often result dry….but! his one hits my playlist!
Stony and dad were astounded by this muffins..it is easy and quick to make…

Low carb almond meal crepes

We are originally Hungarians and one of our traditional dish called “Hortobagyi palacsinta”. It is a kind of very savory meat stuffed crepe what is very smooth and very creamy. I think it is one of the perfect invention from my country 🙂 and my children love it!
These crepes are very good and can be very versatile as can be used with different fillings also salty or sweet. These crepes are very easy to make, they are soft and have a great taste! You can just roll them up with a slice of cheese an ham and off you can go!

..Originally it is made with grain-flour but I had an idea and swap the flour with almond flour since we do not eat gluten and try to avoid carbs as much as we can.  The result was excellent!

Low Carb and Gluten Free Cheesy spinach puffs

I have been doing this cheesy spinach recipe for a while already..and just love it..!
Very quick to make, delicious, less than one net carb each, it looks great and easy to make a decorative dish with it..and you have a perfect low carb side dish or appetizer for 2-3 days!

Here you find the ingredients, this makes about 30 puffs
( I used to make the double quantity so I have a side dish for at least for 3 days).
